Peruvian Causa

*2 pounds yellow potatoes
*4 Tablespoons aji amarillo paste
*1/2 cup vegetable oil (do not use olive oil)
*Juice from one key lime
*1 can of tuna (can also use a Rotisserie chicken)
*1/2 an onion, finely chopped
*1 cup mayonnaise
*Salt, to taste

Bring potatoes to a boil. Cook until tender. Peel and mash the potatoes while still warm. Let cool and mix with the aji amarillo paste, vegetable oil, and lime juice. Salt to taste.

Mix the tuna (or chicken), chopped onions, and mayonnaise. Place a layer of the mashed potatoes in a 9 x 13 dish and add a light layer of mayonnaise. Cut the avacado and place on top of the mayonnaise layer. Spread another layer of the mashed potatoes and cover with the tuna (or chicken) mixture. Finish off the layering with mashed potatoes and decorate with slices of hard boiled eggs and black olives.

This is such a delicious dish!  If you want to serve authentic causa, do not alter the ingredients.  For a more non-traditional dish, you can lighten up the recipe by using light mayonnaise and 1/4 to 1/3 cup of vegetable oil.  Enjoy!
