Cuy is a staple in the cuisine of the Andean region in Latin America. So, people in areas like Ecuador and Peru (and more!) get to enjoy the delicacy that is…. guinea pig. Yes, I said guinea pig, but it is almost as common to them as chicken is to us. It is available from upscale restaurants to street cart vendors, and it will be available to be served to you in many different, but delicious ways. It is about the size of a rabbit, and it got its name for sound it makes: “cuy cuy.”
